1/2 cup coconut flour (I use Bob's Red Mill)

1/4 cup flaked coconut

2 tbs maple syrup

2 tbs coconut oil

1 tsp vanilla extract

1/2 cup sunflower seeds

1/2 tsp sea salt (omit if using salted sunflower seeds)

1/2 tsp nutmeg

1 tbs chia seeds soaked in 2 tbs almond milk

2 tbs shredded coconut (for rolling)


1Blend all ingredients in a food processor or blender until a smooth dough forms.

2Shape into balls.

3Roll in shredded coconut.

4Store in freezer until ready to eat.
