

Warm Walnut and Blueberry Barley Porridge

Directions
1If you are using pearl barley, soak the grain overnight and rinse thoroughly before putting to the boil
2Combine barley with double the amount of water and vanilla in a small saucepan and bring to the boil. If using pearl barely add an extra ⅓- ½ cup water
3Lower heat and simmer until the water has been absorbed.
4Barley flakes only take about 7- 10 minutes to cook, sometimes less. Pearl barley can take between 30 – 50 minutes until completely soft, depending on how much grain you are using.
5Mix in blueberries, chia seeds and walnuts
6Transfer to bowl and top with a little bit of soy or almond milk and maple syrup to taste. Enjoy
