⅔ cup of peeled and grated cucumber. I use Lebanese cucumbers

½ cup raw cashews (soaked for at least 3 hours)

1 clove of garlic – or more if you like it more garlicky

½ TBSP extra virgin olive oil

½ tsp dry dill

1 TBSP chopped mint

pinch salt

Juice of 1 small lemon


1Begin by peeling and grating your cucumber

2Add all the ingredients to a blender or food processor and blend until smooth. Adjust to taste.
