5 tablespoons hot water

2 tablespoons plus 2 teaspoons (15 grams) unsweetened cocoa powder

¾ teaspoon instant espresso

2 tablespoons (30 grams) coconut oil

¼ cup grapeseed oil (or another neutral oil, such as canola)

1¼ cups (250 grams) granulated sugar

1 ounce (30 grams) unsweetened chocolate, finely chopped

3 tablespoons aquafaba*

45 grams mashed avocado (about ¼ of a large avocado)

1 teaspoon vanilla extract

1 cup (120 grams) unbleached all-purpose flour

½ teaspoon baking soda

¼ teaspoon sea salt

3 ounces (85 grams) bittersweet (60-75%) chocolate, very finely chopped

Confectioners’ sugar, for serving (optional)
