Recipe by Peanut Head

Ingredients

2 chia eggs (2tbsp chia mixed with 6 tbsp warm water, let stand for 5 minutes until egg like consistency is achieved)

1/4 cup pecans

1 cup almond meal

1/2 cup oats

1/2 cup rehydrated gojis (just run your goji’s under warm water for a few minutes to rehydrate)

1/4 cup sunflower seeds

2 tbsp pepitas

1/4 cup cacao nibs

1/4 cup rice malt syrup

1/4 cup melted coconut oil

1 tsp vanilla essence

1 tsp cinnamon

Directions

1In a food processor pulse almond meal, pecans and gojis until just combined

2Add chia egg and pulse gently ensuring all ingredients are ingredients are mixed together

3Add all remaining ingredients and mix on a low speed for 1 minute. Ensure your don’t over mix at this stage as you want the mixture to still have a lot of its texture and avoid it becoming one large bowl of batter

4Transfer mixture to a large tupperware container lined with parchment paper i used a container measuring 16x10cm

5Press the mixture down firmly so its all tightly packed in

6Cover and place in the freezer for 1 hour

7Cut into rectangles approx. 2.5x5cm (this slice is very dense so you only need a small serving to satisfy)

8Store in an airtight container in the fridge
