1 cup Certified Gluten-Free Rolled Oats

1/2 cup oat flour

1 cup Almond Meal

1 tablespoon ground flaxseeds

Pinch sea salt

1/4 cup maple syrup

2 tablespoons coconut oil

1/2 teaspoon vanilla

Strawberry Jam:

2 ¼ cup strawberries, stems removed and chopped

¼ cup Coconut Palm Sugar

1 tablespoon lemon juice


1To make the jam, bring strawberries, sugar, and lemon juice in a medium saucepan on medium heat. Bring to a boil and reduce heat to simmer until sauce is thick around 20 minutes. Remove from heat and allow to cool.

2Preheat oven 375°F. Line an 8×8 baking dish with parchment paper and spray with cooking oil. Set aside. In a large bowl, add oats,oat flour, almond meal, flax seeds and salt. In a smaller bowl, combine maple syrup, coconut oil, and vanilla . Stir in the liquid mixture, into the dry ingredients until fully combined. Set aside 1/3 of the base and press the remaining 2/3 in the base of the prepared pan. Spoon strawberry jam on top of the base and spread evenly using a spoon. Sprinkle the remaining oat mixture on top. Bake for 30 minutes or until top is golden brown. Remove from oven and allow to cool before cutting into bars.
