Ingredients

3-4 pounds boneless pork shoulder (6-ish pounds if it’s bone-in; you must use pork shoulder or Boston butt)

1/2 cup lime juice

1/2 cup lemon juice

1 heaping (!) tablespoon ground cumin

1 tablespoon garlic powder

1/2 tablespoon salt

1 teaspoon ground coriander

1 teaspoon ground black pepper

1 teaspoon cayenne pepper
