Spicy Veggie Confetti Peanut Sauce Noodle Bowl

Recipe by Moon and Spoon and Yum


Spicy Peanut Sauce (3/4 cup)

3/8 cup salted peanuts

2 tbs sesame oil

2 garlic cloves

1/4 tsp ginger, ground

1 Serrano pepper

1 medjool date, pitted

1/3 cup water

1 tbs apple cider vinegar

Brown Rice Pasta with Veggie Confetti

12 oz brown rice pasta (I used Jovial's Penne Rigate)

1/2 red onion, finely chopped

2 mini sweet bell peppers, finely chopped

1 garlic clove, minced

1 cup peas, steamed

sesame seeds & dried cilantro for garnishing


Spicy Peanut Sauce

1In a food processor, blend peanuts & sesame oil until smooth.

2Add remaining ingredients & process until evenly mixed.

3Use right away or store in an airtight glass container in the fridge for up to 2 weeks.

Brown Rice Pasta with Veggie Confetti

1Cook brown rice noodles until al dente. Drain & set aside.

2Steam peas, set aside.

3In a sauce pan over medium heat saute onion, garlic & peppers in a dash of sesame oil until all begins to brown.

To serve:

1Fill bowl(s) with pasta, sprinkle with veggie confetti, drizzle with

2peanut sauce, garnish with sesame seeds & cilantro! Serve warm or cold.
