Spiced Vegetable Soup with Quinoa

Ingredients

1 tablespoon organic coconut oil

8 medium cloves garlic, smashed and chopped

2" piece ginger root, peeled and chopped

8 ounces mushrooms, stems trimmed and sliced into 1/2" pieces

1/2 cup uncooked Quinoa, rinsed

2 teaspoons kosher salt

1 1/2 teaspoons ground turmeric

1 teaspoon ground cumin

1 teaspoon ground coriander

1/2 teaspoon ground mustard powder

1 5-ounce can sliced bamboo shoots, rinsed and drained

6 cups vegetable broth

2 cups water

1/2 pound fresh green beans, ends trimmed and cut into bite-sizes pieces

1/2 pound broccoli florets, cut into bite-sized pieces

4 to 5 fresh chives, chopped
