Spiced Quince Tarts

Recipe by Sift and Whisk

Ingredients

4 quinces (roughly 2 pounds)

4 cups water

1 tablespoon fresh lemon juice

½ cup (100 grams) granulated sugar, plus 2-3 tablespoons for sprinkling

¼ cup (85 grams) agave nectar, brown rice syrup, or honey (if not vegan)

1 whole star anise

1 whole cinnamon stick

3-5 whole cloves

1-inch slice of fresh ginger

1 (490 grams) package frozen puff pastry sheets, thawed (vegans, use Pepperidge Farms brand)

2 tablespoons non-dairy milk

¼ cup (25 grams) almond flour

½ cup (40 grams) almond slices

Confectioners' sugar, for sprinkling (optional)
