Recipe by Avocado Pesto

Ingredients

1 head romaine lettuce, chopped

1 can black beans, rinsed and drained

1/2 small red onion, thinly sliced

2-4 salmon steaks (1 and 1/2 pounds total)

1/2 teaspoon cumin

1/2 teaspoon hot smoked paprika

1 tablespoon extra virgin olive oil

For the dressing:

1 avocado

1/2 cup coconut milk

1/4 cup water

1 cup cilantro, chopped

1 clove garlic, minced

salt to taste,

2 tablespoons lime juice
