Southwest Chicken Salad

Recipe by Pip and Ebby


2 cups chopped Romaine lettuce

1/2 cup shredded chicken (suggestion: pull meat from a Rotisserie chicken)

1/2 cup canned black beans, rinsed

1/2 cup cooked or canned corn

1/2 cup chopped bell pepper

1/2 cup halved cherry tomatoes

3 tablespoons Avocado Ranch Dressing

1/2 cup pepperjack cheese

Avocado slices, for topping

Lime wedges


1On a large plate or in a medium bowl, combine the lettuce, chicken, black beans, corn, peppers and tomatoes. Mix well and drizzle Avocado Ranch Dressing over top.

2Top with cheese, avocado slices, lime wedges and enjoy!
