Smashed White Bean and Avocado Open-Faced Sandwich

Ingredients

1 slice of gluten free or sprouted grain bread

½ ripe avocado

¼ cup cannellini beans

¼ of a red bell pepper, sliced into strips

Handful of sprouts

Sprinkle of garlic powder

Pink Himalayan Sea Salt

Black pepper

Directions

1Toast slice of bread

2Scoop out half an avocado and put into a small bowl

3Add ¼ cannellini beans to the bowl with the avocado

4Season with a little garlic powder, pink Himalayan sea salt and black pepper

5Mash with the back of a fork until combined

6Spoon mixture onto the piece of bread – don’t be afraid to pile it on!

7Add slices of red bell pepper and handful of sprouts
