Roasted Purple Potato Salad

Recipe by Honey, Ghee, and Me

Ingredients

7-8 purple potatoes

25-30 green beans (1 cup chopped)

1 small or 1/2 large yellow, orange, or red bell pepper (1 cup chopped)

2 radishes, thinly sliced (1/4 cup)

1/2 cup cherry or grape tomatoes, halved

1/4 cup chopped fresh dill

1/4 cup chopped fresh parsley

1/2 cup celery (omit for low fodmap if needed)

1/4 cup dill pickles (without garlic for low fodmap- or make your own garlic-free dills!)

1 tbsp mayonnaise, plus more as desired (see my homemade mayo recipe HERE)

1/2 tsp apple cider vinegar

1/4 tsp salt

1/4 tsp black pepper

to roast potatoes..

2 tbsp olive oil

1/4 tsp salt

1/4 tsp back pepper
