Roasted Garlic Potato Salad with Pancetta, Scallions and Chives

Ingredients

ROASTED GARLIC:

5 bulbs Garlic

a few tbsps Extra Virgin Olive Oil

Aluminum foil to roast

POTATO SALAD:

2 lbs Baby Red Potatoes

4 oz Cubed Pancetta (I used Citterio)

Roasted Garlic (see above)

pinch of Salt

1/4 cup Extra Virgin Olive Oil

2 – 3 tbsps Red Wine Vinegar (taste to your liking!)

1/4 cup Fresh Chive, diced

1/2 cup Scallions, diced
