Roasted Butternut Squash and Green Lentil Curry

Ingredients

Roasted Squash:

1 butternut squash, peeled and cubed

1/8 c olive oil

2 tsp Madras curry powder

1/2 tsp garam masala

pinch red pepper flakes

1/2 tsp smoked paprika

1/2 tsp salt

8 oz. Cremini mushrooms, cut into quarters

Green Lentil Curry:

1 lb green lentils

water as needed

1 Tbs olive oil

1 tsp smoked paprika

1 1/2 tsp chili powder

1 tsp cumin

1 tsp Madras curry powder

1 tsp garam masala

1 onion, chopped

4-5 cloves peeled, chopped garlic

1 6 oz. can no salt added tomato paste
