Roasted Beet, Kale and French Lentil Salad

Ingredients

For the beets:

8 medium sized beets, peeled and each cut into 8 wedges

A drizzle of olive oil

Sea salt and black pepper, to taste

For the French lentils:

1 cup du puy lentils, or sub beluga or green lentils if you wish

2 bay leaves

1 vegetable stock cube

For the kale:

200 g kale, destemmed and cute into manageable pieces

1/2 lemon, the juice

1 1/2 tbsp soya sauce or tamari

1 tsp olive oil

For the garlic tahini dressing:

1/2 cup tahini

1/2 lemon, the juice

1 tbsp soya sauce

1 garlic clove, minced

Black pepper to taste

A splash of water
