1Preheat your oven to 180°C (fan-forced).
2Wash the carrots, zucchini and potato and cut into chunks (about 3cm wide) leaving the skin on. Peel the onion and cut into wedges.
3Spread the chopped vegetables out in one layer onto a baking tray. Sprinkle over the Lemon & Herb Dukkah and drizzle with a generous amount of extra virgin olive oil. Season with a good pinch of sea salt and cracked black pepper.
4Bake in the preheated oven for about 1 hour or until the vegetables are cooked through.
5To serve, crumble the feta over the vegetables and top with parsley.
