3 bell peppers, any colors, seeded and sliced thin

½ onion, sliced thin

1 tablespoon olive oil

1 can (15 ounces) fire roasted tomatoes

1 cup cooked red quinoa

1 teaspoon kosher salt

⅛ teaspoon ground dry mustard

3 cups skim milk

1¾ cup chicken broth

2 tablespoons parmesan cheese, shredded

⅓ cup mozzarella cheese, shredded
