1 cup of quinoa

1 eggplant

1 brown onion

4 cloves of garlic

olive oil

1 red capsicum

3 fresh tomatoes

1 zucchini

salt & pepper




Dried italian herbs


1Rinse 1 cup of quinoa

2Put 1 cup of quinoa and 1 cup of water in a pan on medium heat with the lid until it boils

3Then put it on low heat with the lid for 12 min stirring through every few minutes

4Take of from the heat when done

5Chop the onion and the garlic

6Put in a pan with some olive oil

7Cook until clear; then add the chopped up eggplant and put a lid on

8Add the capsicum and stir through

9Add the tomatoes and stir through

10Add the zucchini and stir through

11Add in your fresh and dried herbs and season with salt and pepper; (optional to add a bit of chili)

12Leave to cook for 15- 20 min on low heat covered with a lid until all the vegetables are nice and tender

13Serve on top of the quinoa and enjoy!
