Recipe by A Clean Bake

Ingredients

1 1/2 cups finely ground blanched almond flour

1/4 cup coconut flour

2 Tablespoons granulated monk fruit sweetener or granulated stevia like Norbu, like Natvia

1/8 teaspoon fine sea salt

1/8 teaspoon baking soda

1 large egg lightly beaten

1/2 teaspoon vanilla extract

1/4 cup honey

1/4 cup melted coconut oil

1/4 cup shelled pistachios lightly salted, if possible, finely chopped

1/3 cup whole dried apricots finely chopped
