1 tablespoon sugar (optional; this can be omitted for savory crusts)

2 sticks (8 ounces) unsalted, good quality butter (preferably a cultured or European style butter), cut into ½-inch dice

1 teaspoon apple cider vinegar

1/3 - ½ cup cold water
