Peppermint Cocoa Candied Nuts

½ cup pecans

½ cup walnuts

½ cup hazelnuts

½ cup macadamia nuts

½ cup buckwheat groats

½ cup brown rice syrup

2 Tbl coconut sugar

2 Tbl cocoa powder

1 tsp vanilla extract

6 drops peppermint essential oil (FOOD GRADE!)

pinch sea salt

2 candy canes, crushed and divided


1Preheat oven to broil on high.

2Heat a skillet and add the nuts and buckwheat groats. Toast for 4-5 minutes tossing every 30 seconds to ensure proper toasting.

3In a large mixing bowl, add toasted nuts with brown rice syrup, coconut sugar, cocoa powder, vanilla, peppermint oil, sea salt, and ½ the crushed candy cane and mix well until all ingredients are thoroughly combined.

4Place nut mixture on a parchment paper lined baking sheet and broil on high for 3-4 minutes.

5Remove from the oven, dust with remaining crushed candy canes, and allow to cool for 30 minutes. Break into pieces and save immediately or package. Keep at room temperature or refrigerator.
