Cook maple syrup in a heavy bottomed saucepan at medium-high heat until it is bubbling and reaches soft ball stage or 235˚F.
Pack snow onto a tray or plate so the surface is firm.
Spoon cooked maple into 2-3 strips over the snow at a time. Twist taffy around popsicle sticks to serve. Work quickly while maple taffy is still pliable to twist. Repeat this process until all of maple is used up.
If maple becomes to thick/hard as it cools to spoon over snow, simply warm it back up on the stove to soften, and continue making taffy strips.
Best eaten right away.
