Maple Dijon Glazed Salmon with Farro and Asparagus

Recipe by Will Cook For Friends


    For the farro:

    1 cup semipearled farro

    2 1/2 cups water

    1 tsp. kosher salt (or 1/2 tsp. sea salt)

    For the salmon:

    2 TBSP maple syrup

    2 TBSP dijon mustard

    2 6-oz. salmon fillets

    2-3 TBSP olive oil

    1 lb asparagus, trimmed

    Kosher salt
