Loaded Vegetarian Mushroom Nachos

Ingredients

Mushroom mixture

250 grams cup, flat or portobello mushrooms

1/2 brown onion

1 can tinned tomatoes

2 tbsp tomato paste

1 tsp ground cumin

1 tsp smoked paprika

1/2 tsp dried garlic powder or flakes

1/2 tsp dried oregano

1/2 tsp chilli powder - add more to increase spiciness

salt and pepper

olive oil for cooking

Rest of the nachos

250 grams tortilla chips

1 can black beans

1 can corn kernels

1 and 1/2 cups grated cheddar cheese

sour cream, avocado, fresh tomato and coriander to serve
