Ingredients

1 cup dry green lentils, soaked overnight and rinsed

2 tablespoons olive oil

1 small yellow onion, diced (about 1 cup)

2 medium-size carrots, peeled and chopped (about 3/4 cup)

1 green bell pepper, cored and diced (about 3/4 cup)

3 cloves garlic, minced (about 2 teaspoons)

1 (15 ounce) can fire roasted crushed tomatoes

2 tablespoons chili powder

1/2 teaspoon paprika

1 teaspoon mustard powder (or 1 tablespoon yellow mustard)

1/4 teaspoon crushed red pepper

1/8 cup tomato paste + 1/8 cup ketchup (or 1/4 cup ketchup or tomato paste)

1 tablespoon apple cider vinegar

2 teaspoons pure maple syrup

1 tablespoon vegan Worcestershire

1/2 cup vegetable broth

1/4 teaspoon salt

1/4 teaspoon pepper
