1/2 cup dry brown lentils

3 tablespoons olive oil

1 large shallot

3 garlic cloves

8 ounces mushrooms

1 tablespoon dried thyme

1 teaspoon salt

1/2 teaspoon pepper

1 cup green peas

1/2 cup medium-grind cornmeal + 1/2 cup for topping

1/2 cup garbanzo bean flour

Serving suggestions: toasted whole grain buns, thinly sliced red onion, green lettuce, and sliced tomato

Lemon Basil Mayo

3/4 cup vegan mayo

Zest and juice of 1 lemon

10 fresh basil leaves, finely chopped
