peeled rind of 2 lemons

2 eggs

1 cup olive oil

1/2 tsp salt

1 cup natural yogurt (250g)

2-3 tbsp lemon juice

2 cups flour (250g)

3 tsp baking power

250-300 g blackberries

Elderflower Glaze

1 cup icing sugar (100g)

elderflower cordial, 1 tsp at a time
