Homemade Almond Milk

Ingredients

1 cup raw almonds

1L (2 pints) filtered water

1 - 2 Medjool dates, pitted

Directions

1Place the almonds and Medjool dates in a bowl and cover with half the filtered water. Allow to soak overnight. (Almonds can be left soaking up to 48 hours which will result in a creamier milk).

2After soaking, drain and rinse the almonds thoroughly. Blend the soaked almonds and the dates with the remaining filtered water. Pulse several times, then blend on high for 2 minutes.

3Using a fine cheesecloth or a nut milk bag*, strain the blended liquid through into a glass jar.

4Seal tightly and store in the fridge for use within 4 days.

Variations

1Vanilla after straining, blend with 1 tsp pure vanilla extract

2Strawberry after straining, blend with 1 ½ cups fresh or frozen strawberries. Strain again

3Chocolate after straining, blend with 1 2 Tbsp cacao powder

4Chai when blending, replace the filtered water with 500ml (1 pint) of Chai tea.

5Mocha after straining, blend with 1 espresso shot and 1 Tbsp cacao powder
