2 x 400g cans white / cannellini beans

1/4 cup pinenuts toasted

1/2 cup flat leaf parsley chopped

4 eggs

2 avocados

Herby dressing

1/2 cup fresh mint roughly chopped

1/2 cup fresh basil

1/2 cup fresh parsley

1 tablespoon capers

2 anchovy fillets rinsed

zest and juice of 1 lemon

1/3 cup olive oil

1/4 teaspoon red chilli flakes

1 teaspoon salt

1 tablespoon white wine vinegar
