120 -150 gr of rocket salad

1/2 zucchini

3 ripe peaches

1tbsp of pine nuts

1 handful of mint

1 tbsp of EVO olive oil

2 tsp of quality balsamic vinegar


1Slice peaches and set on the grill

2Chop mint leaves and mix with rocket

3Slice ribbons of 1/2 zucchini

4Place rocket and mint, add zucchini ribbons and grilled peaches

5Sprinkle with pine nuts

6Season with salt & pepper

7Drizzle olive oil and balsamic vinegar
