1Preheat your oven to 120°C and line a large baking tray with baking paper.
2Place the raw nuts in a plastic bag and bash with a rolling pin or something heavy to crush them. You want some larger pieces and some smaller crumbs. Tip the nuts into a large bowl and mix through the coconut flakes, almond meal, cacao nibs, chia seeds, spices and salt. Add the melted coconut oil, vanilla and almond milk and stir until everything is well combined.
3Spread the mixture out onto the lined baking tray and bake in the preheated oven for 1 hour or until browned. At the 30 minute mark, I use a large spoon to toss/re-arrange the granola on the tray to ensure it cooks evenly.
4Once cooled, store in an airtight jar or container in the fridge.
