Ingredients

4 to 5 cups of your favorite marinara sauce

1 9-ounce box gluten free (no cook) Lasagna Noodles

1 pound whole milk ricotta cheese

2 large eggs

1 1/2 teaspoons kosher salt

1 teaspoon dried parsley

1/2 teaspoon freshly ground black pepper

1/4 teaspoon crushed red pepper flakes

1 Tablespoon extra virgin olive oil

1 pound frozen organic chopped spinach

8 ounces mushrooms, thinly sliced

2 medium cloves garlic, crushed

pinch salt and pepper

1 pound whole milk mozzarella, thinly sliced

1/4 pound grated Locatelli (or Pecorino Romano)
