1Place the milk, banana, and oats in a blender and blend until smooth.
2Add egg, baking powder, and vanilla. Blend until combined
3Heat a griddle on the stove to medium heat and grease with coconut oil
4Pour about ¼ cup of batter onto griddle. If adding optional additions (chocolate chips, berries, etc.) add to pancakes at this time.
5Cook until large bubbles appear on the surface and the perimeter seems firm (a minute or two).
6Flip and cook for another minute or two, until both sides are golden brown. Repeat with the rest of the batter.
7Serve immediately with maple syrup or coconut nectar.
