Ingredients

Day 1:

1¼ cup whole raw almonds

6 tablespoons long-grain white rice

1 3-inch piece of cinnamon

3 cups boiling water

Day 2:

7 tablespoons sugar

2¼ cups cold water, divided

2 tablespoons latte-grade matcha

2 tablespoons canned coconut cream (or the cream from the top of an unshaken can of full-fat coconut milk)

¼ teaspoon pure vanilla extract

Pinch of salt
