Chocolate Chip Cookies

Recipe by From the Athlete's Kitchen

1 & 1/2 Cups Almond Flour

3/4 Tsp Maldon Sea Salt or large flake salt

1/2 Tsp Baking Soda

1/4 Cup Maple Sugar

1/4 Cup Coarsely Chopped Walnuts

1 Egg or Flax Egg if you’d like to make this Vegan

2 Tbsp Olive Oil

2 Tbsp Coconut Milk

1 Tsp Vanilla

3/4 Cups Chopped Dark Chocolate or Dark Chocolate Chips


1Preheat oven to 350 Degrees F and set out lined baking sheets.

2Whisk the almond flour, salt, baking soda, maple sugar, walnuts and chocolate pieces together.

3Separately, whisk together the egg, olive oil, coconut milk and vanilla.

4Pour the wet batter into the dry bowl, using a rubber spatula to scrape all of the batter out of the bowl.

5Stir the wet and dry ingredients together until just incorporated.

6Scoop batter out into ping-pong ball sized portions, then flatten to about 1 inch thick disks.
