Cheesy, Better-than-Potatoes Cauliflower Purée

Recipe by Sprinkles and Saturdays

Ingredients

24 oz cauliflower florets (or two bags of cauliflower from Trader Joe's)

1/2 cup low fat coconut milk

1/4 cup Daiya vegan mozzarella cheese (found at Whole Foods)

1 tablespoon Earth Balance

1/4 teaspoon garlic powder

Directions

1Steam cauliflower (if you buy the florets from TJ's they can steam in the microwave in the bag).

2Add all ingredients to a food processor and process for a few minutes until smooth, scraping down the sides as you go if needed. Season with salt and pepper.
