Ingredients

1 medium cauliflower, cut into florets/chunks

1 medium potato, peeled and cubed

1 Tbs olive oil (or your favorite cooking oil)

3 cloves garlic, peeled and minced

1 small onion, chopped

1/2 cup unsweetened almond milk (or your favorite milk)

1/4 cup nutritional yeast

2 Tbs olive or coconut oil

1 Tbs lemon juice

1 Tbs white wine vinegar

2 tsp Dijon mustard

1 tsp onion powder

1 tsp garlic powder

pinch red pepper flakes

1 tsp salt

8 oz. your favorite pasta (I used brown rice pasta)

5 c fresh spinach (optional)
