Butternut Fritters with Lemon Chèvre

Recipe by Garlic and Zest


1/2 peeled and seeded butternut squash, grated

1/2 teaspoon kosher salt

4 green onions, thinly sliced

1 shallot, minced

2 tablespoons olive oil

zest of one lemon

1/2 cup self rising flour

1/8 teaspoon (or more) cayenne pepper

1/4 teaspoon black pepper

2 eggs, lightly beaten

2 tablespoons olive oil + 2 tablespoons canola oil for frying

For lemon chèvre

4 ounces chèvre (goat cheese)

5 tablespoons cream

zest and juice of one lemon

1/2 teaspoon black pepper
