Brussels Sprout, Sweet Lime and Avocado Salad

Ingredients

1 pound spinach, washed and dried

2 cups Brussels sprouts, stems trimmed and sliced thin

2 – 3 sweet limes, peeled, deseeded, and segmented

2 avocados, peeled and chopped

1 teaspoon olive oil

1/2 teaspoon sea salt

Sweet Lime Horseradish Vinaigrette

1/4 cup olive oil

3 tablespoons fresh squeezed sweet lime juice

1 teaspoon apple cider vinegar

Zest from 1 sweet lime

2 tablespoons prepared horseradish (I use Gold’s)

1/4 teaspoon sea salt
