Broccoli and Zucchini Salad with Sweet and Sour Macadamia Nuts

1/2 bunch broccolini

1 egg

1/2 zucchini

1 cup baby spinach

1/4 cup macadamia nuts

1/4 tsp smoked paprika

Pinch fine sea salt

2 tsp sesame seeds

1 tsp honey

1 tsp olive oil


1Steam the broccolini and boil the egg. While that's happening, turn your zucchini into 'zoodles' with a Spirooli or if you don't have one of those, simply use a vegetable peeler lengthways down the zucchini.

2Add the nuts to a large non-stick pan over a med-high heat. Toast for 2 minutes then add the paprika, salt, sesame seeds and honey. Keep stirring until evenly coated and nuts start to turn brown. Remove from the pan and set aside.

3Add the oil to the pan and saute spinach and zoodles for 2 - 3 minutes, or until just wilted. Season with salt and pepper.

4Arrange the spinach and zoodle mixture onto the plate, then top with broccolini and the nuts. Cut the egg in half and pop on top to finish the dish.
