

Blooming Onion

Directions
1Heat grill to medium heat.
2To prepare the onion, cut the stalk end off and peel off the flaky outer layer of the onion. Place the onion cut-side down so it's nice and sturdy. Cut a slice within 1 in" of the core from top to bottom. Repeat three more times evenly around the onion (so it's quartered). Then cut slices in the middle of each slice so you have 8 even slices around the onion. 3In a small mixing bowl, mix together 1 Tbl ghee, paprika, and sea salt.
4Rub each onion petal with the ghee mixture and place on grill for 15-20 minutes (being careful not to char the tips too much)
5While onion is cooking, mix together the panko, parsley, ume plum vinegar, and pepper. Sprinkle mixture over onion 5 minutes before removing from heat (or immediately after taking off the heat).
6Remove onion and allow to cool 5 minutes. The "petals" should be sweet and come off easily. Eat as is or dip in your favorite sauce (I love my chipotle cream sauce! - recipe like above)
