Ingredients

1 pork tenderloin (about 1.5 lbs)

Salt and pepper

1 tablespoon olive oil or ghee

5 large shallots, thinly sliced

4 sage leaves

8 sprigs of thyme

Blackberry Wine Sauce

1 cup blackberries

8 sage leaves

1 cup zinfandel wine

2 tablespoons butter

Salt and pepper, to taste
