Ingredients

4 medium/large-size sweet potatoes

1 tablespoon extra virgin olive oil

1 yellow onion, diced

1 green bell pepper, cored and diced

2 jalapenos, cored and diced

1/4 teaspoon salt & pepper

2 teaspoons ground cumin

1 teaspoon chili powder

1 chipotle pepper in adobo sauce + 2 tablespoons adobo sauce from the can

1 (15 ounce) can black beans, drained and rinsed

1 (14.5 ounce) can diced tomatoes with green chilies

Optional toppings: cilantro, Greek yogurt or cashew sour cream, shredded cheese, diced green onions
