2 cups masa harina

1 teaspoon fine sea salt , plus more for seasoning

1 ¾ cups warm water

2 tablespoons extra virgin olive oil

2 scallions , thinly sliced

2 garlic cloves , minced

1 teaspoon ground cumin

1/2 teaspoon ground coriander

Freshly ground black pepper

1 cup rinsed and drained black beans

Freshly ground black pepper

½ lime

2 tablespoons chopped cilantro

1/3-1/2 cup grated cheddar cheese

Grapeseed or vegetable oil for frying
