2 medium beets

1 teaspoon olive oil

1 pinch of salt

For the Dip

4 ounces of goat cheese

5.3 ounces plain greek yogurt (1 small container)

2 teaspoons balsamic vinegar

1 – 2 teaspoons fresh thyme leaves

1/2 teaspoon garlic, minced

1/8 teaspoon salt
