Banana Almond Meal Muffins

Recipe by The Healthy French Wife

Ingredients

2 eggs

2 ripe bananas

1 1/3 almond meal

3 tbsp coconut flour

1/2 cup almond milk

1 1/2 tbsp maple syrup;(or honey/rice malt syrup)

1 tsp baking powder

1 tsp vanilla extract

1 tsp cinnamon

2 tbsp raw cacao powder (optional: to make chocolate banana muffins)

Directions

1Preheat oven to 200 degrees and line a muffin tin with 6 paper liners

2Mash bananas, mix eggs and milk together

3Add almond meal & coconut flour

4Add cinnamon and vanilla

5Add almond milk

6Add maple syrup or any other sweetener

7Pour into muffin tin and bake for 25-30 min until knife comes out clean.

8(For chocolate banana muffins I added the cacao to the batter after filling half of the muffin tin- you can make them all chocolate or none)

9Cool on a cooling rack.
