Baked Berry Oatmeal

1 teaspoon aluminum-free baking powder

1 ½ teaspoons ground cinnamon

½ teaspoon fine grain sea salt

2 cups old-fashioned rolled oats (look for gluten-free oats to make this a gluten-free recipe)

½ cup walnuts, almonds or pecans, chopped, divided

⅓ cup 100% pure maple syrup (or ¼ c. for a more subtle sweetness)

2 cups whole milk, unsweetened hemp milk or almond milk

1 large egg

1 ½ Tablespoons unsalted butter, unrefined coconut oil or organic Earth Balance, melted and cooled slightly, plus more for greasing baking dish

2 teaspoons pure vanilla extract

1 ½ cups fresh or frozen berries, divided
